My highlight of the Grape to Glass training week (part of the Inter Hotel Challenge ) was the Nederburg winery in Paarl. The amount of planning that goes into running such a large operation, and the winery’s ability to consistently produce quality wines, impressed me. The James Sedgwick Distillery in Wellington was another stand-out moment. The ability to run a 100% sustainable establishment takes a lot of courage and perseverance.
