Haut Espoir is on the foot slopes of the Groot Drakenstein Mountains. The terroir comprises well drained coarse sandy loam derived from granite and Table Mountain sandstone. The farm has a very high annual rainfall. With our mountain aspect and elevation we are fortunate to have good sunshine and sufficient coolness for optimal ripening of our grapes.

Quality wine starts in the vineyard. Our attention to careful viticulture practices in our own vineyards and those where we purchase fruit is the start of our quality focus. Our aim is to have vines that are “in balance”. We monitor and implement careful pruning, canopy management and bunch selection practices to ensure the grapes come from vines that are balanced in terms of the soil quality, vine growth, canopy management and yield. With the additional monitoring of soil water content using a microprobe and 35 water monitoring stations we ensure vines are not stressed due to low soil moisture.

Our attention to careful viticulture practices in our own vineyards and those where we purchase fruit is the start of our quality focus. Grapes are hand picked in the coolness of early morning and we use traditional winemaking techniques. Red wines are aged predominantly in French oak barrels, with selective use of Hungarian oak. Whole berry maceration and barrel malolactic fermentation are normally employed. For white wines, both barrel and tank fermentation are used. Irrespective of the final process, our signature is careful handcrafted attention.
