The Cellar

Stellekaya is located in an old brandy cellar, within walking distance from the Stellenbosch town centre.

The cellar had been renovated and has a capacity of about 20,000 cases (6 x 750ml) of premium red wine a year.

All of our production is done using the traditional “pigeage”, punch down method in open fermentation bins. The fruit is cooled on arrival and a cold maceration process is applied to ensure that the fruit flavours are captured prior to fermentation taking place. All our wines are pressed using a wooden basket press followed by 100% maturation in French oak barrels. 

The Vineyards

Stellenbosch has for many years been regarded as a premium red wine producing area. The vineyards are situated on well drained slopes of decomposing sandstone and rich clays. Many of these vineyards overlook False Bay and enjoy cooling sea breezes each evening.

Most of the grapes are sourced from selected vineyards, but since 2010 we have been picking our own grapes from our estate measuring 23 hectares in Blaauwklippen Road. For the 2013 harvest about half of the crop will be from our own vineyards. The varietals we have include Cabernet Sauvignon, Cabernet Franc, Malbec and Merlot.

Care is taken to limit yields and to apply techniques to ensure that vigour of the plant is controlled to ensure that the fruit is of the highest possible quality and is picked at optimum ripeness.

When we are happy that the grapes are ready, we hand pick the fruit into small lug boxes and transport it to our cellar nearby.
