ageing : Drinks well now, though will improve with a few years in the bottle.

in the vineyard : There is very little Carignan grown in South Africa. We are very excited by the quality of the grapes which we accidentally found whilst looking for old vine Pinotage.

about the harvest: Carignan was picked ripe in March 2001. These grapes are from dry farmed low yielding vineyards in the Pedeberg area.

in the cellar : Grapes were destalked and lightly crushed. Rhone yeasts were used for fermentation. Malolactic fermentation was completed in tank when the wine was transferred directly to barrels after malolactic was completed. The wine spent 8 months in barrel, before bottling without filtration.
