A modern, automated bottling line with screw cap and cork closure possibilities allows Darling Cellars to package wines suited to every markets' needs.

Varietals
The main focus in Darling is Sauvignon Blanc and Shiraz. The cool influence from the Atlantic Ocean makes Darling ideal area for growing premium quality Sauvignon blanc. Excellent performing cultivars include Pinotage, Chenin blanc, Grenache, Mourvedre, Merlot, Viognier and Nouvelle.

Biodiversity highlights:
Area conserved – 2987ha.
With a total of 2987ha natural land, Darling is preserving 2.3 hectare of natural veld for every hectare of vines. With more than 10% of the floral species in only 1% of the area of the Cape Floral Kingdom, Darling truly is a unique region amongst the grape growing areas.




Darling Area
The Darling area historically is a dairy area and only the last 10 – 15 years, grape growing has come to the fore. Renowned for its wild flowers, it is one of the Western Cape’s most diverse areas. The Darling Wildflower Society was founded in 1915 with an annual show in September.

Cellar
Great improvements and modernisation has taken place since 1948! Various size stainless steel tank from 5000l to 54000l abound in the cellar. This give us the opportunity to create small, unique batches of wines, or bigger, uniform batches for volume brands. A barrel ageing cellar with approximately 450 barrels is the pride and focal point of the cellar.

Terroir
South Africa is a land of contrasts, be it demographically, or nature. Every winemaking area is quite unique, with the predominant factors being proximity to the ocean, the prevalence of mountains or low lying hills, soil types and composition, and rain fall.

The Vineyards
About 95% of the total 900ha vineyards from which Darling Cellars sources its fruit are in “bush vine” format. About the same amount of the vineyards are un-irrigated as well. The advantages of bush vine are plentiful, but the most important attribute for Darling Cellars is that a bush vine is quite hardened against drought. As the water resources in the area are very limited, the only choice is to plant bush vines.

The Farm
Darling Cellars is situated on the cool west coast of South Africa on the R315 between Malmesbury and Darling, approximately 1 hour’s drive from Cape Town and 15 kms from the coast line.
