The Wines

Remhoogte specializes in the production of high quality red wines, specifically cape blends (a red blend that contains pinotage).

The red cultivars go through a process of triple sorting. The grapes are initially sorted in the vineyard both before and at harvest. They then go through a process of whole bunch sorting on a conveyor belt prior to going through the destemmer. After destemming the individual berries are sorted on a vibrating sorting table before going into the tank. The Chenin Blanc is also hand sorted on the conveyor belt before pressing.

All red varietals go through a mandatory cold soak for around 1 week. This is a time where very gentle extraction is allowed to take place as there is no alcohol present and the temperature is kept very low (less than 10 degrees Celsius).

After a week the tanks are warmed up (20 degrees Celsius) and the fermentation is allowed to proceed uninoculated. This means that cultivated yeasts are not added, naturally occurring yeasts facilitate the fermentation.

The fermentation is generally followed by a two to three week period of post maceration. This is where the wine is allowed to remain on the skins after completion of the fermentation, and the temperature of the tank is maintained at around 28 degrees Celsius.

Malolactic fermentation then occurs in 225l French oak barrels. The aging occurs in the same barrels. The wines are aged in oak for 18 to 24 months, depending on the wine.
