About us
In the tradition of the French negociant, Catherine Marshall Wines are produced from selections of special parcels of fruit grown on sites around the Western Cape. Over the years, we have been fortunate to procure fabulous Pinot Noir, Sauvignon Blanc and Syrah (Shiraz) grapes from excellent sites best suited to each variety. It is our mission to select only the very best fruit to express our style that reflects individuality, originality and seriousness in intent.
Our approach to wine making is focused and aimed at classic and elegant restraint. The philosophy is to respect the integrity of each grape variety regarding flavour, tannin and texture profiles. Our aim is to monitor fruit ripening at optimal levels and then to extract the elements that best express the idiosyncrasies of the variety.
Minimal intervention is conducted during the winemaking process where each batch is destemmed into small 500kg lots. This allows for various parcels to be kept separate and a symphony of flavour profiles are assembled in barrels for blending prior to bottling. A small hydraulic basket press extracts the necessary tannin and structural building blocks for perfect flavour, aromatic and textural harmony.
Careful monitoring of maturation time between wine and oak ensures a seamless marriage.
