in the vineyard : A single vineyard, in the Franschhoek Region, planted in 1988, on the South facing slopes, 400m above sea level.
in the cellar : Grapes are handpicked; whole bunch pressed on arrival at the cellar; juice settled in stainless steel for a day; 70% fermented and matured in old French oak and 30% in stainless steel; 7 months later the wine is fermented in bottle and kept on the lees for 24 months before engorgement.
