ASPECT: South-facing, 180m above sea level.
AGE OF VINES: 35 Year old - Old vine certified

about the harvest: The grapes were harvested at optimal ripeness on the 27th of February 2023 at approximately 21.8°B.
in the cellar : The juice was fermented in a combination of oak barrels and concrete egg.70% of the juice was barrel-fermented in 228L 1st & 2nd third fill French oak barrels and 30% in 600L concrete egg. Malolactic fermentation took place in both concreate egg and barrel. The wine was matured "sur-lie" for 8 months with occasional " barrel rolling" to add richness to the palate.
