Webersburg Sauvignon Blanc 2023

Light straw colour, the wine reflects a tropical climate vineyard site. The wine expresses initial notes of Pineapple, Honeybush and Fynbos on the nose with enticing fruit-driven flavours that follow through seamlessly onto the palate. The wine opens up while it spends time in the glass, making this a very complex wine. The wine is youthful, elegant, and fresh with a beautiful, juicy tropical finish.

The 2023 vintage is exceptionally smooth and elegant. The tropical flavours that this wine expresses are influenced by the warm Stellenbosch climate. The wine shows well balanced acidity and the integration of the soil minerality is perfectly intertwined to make up a complex and unique structure. We only yielded between 5-6 tons/ha, given the extraordinary quality of the grapes.
in the vineyard : The predominant soil types in these region are decomposed granite, shale and sandy soils, these soils allow for rich minerality as well as the
perfect fruit characteristics & profile for an exceptional quality Sauvignon Blanc. The annual rainfall in the region of Stellenbosch is approximately 673mm.
about the harvest: Harvest of the Sauvignon Blanc grapes normally starts at the beginning of the harvest season, which can begin anything from late January to mid-February each year. This is all weather-dependent as we only pick the grapes when the Balling levels are satisfactory for the varietal.
in the cellar : The juice was handled reductively and left to settle for a few days, after which it was racked and inoculated to ferment
at low temperatures. Grapes were fermented separately in small stainless-steel tanks using a combination of yeasts allowing for different flavours to be expressed.
