Colour: Ruby medium, to light colour with garnet rim
Nose: Delicate violet, raspberry and red plum. Some notes of scrub, almost hoppy
Palate: Light to medium style with a lively finish

Enjoy as an aperitif and conversation starter. In autumn and winter enjoy with bangers and mash. In spring or summer serve chilled with pizza topped with Parma ham, rocket and buffalo mozzarella or a classic caponata.

in the cellar : Destemmed to stainless steel tank. Natural fermentation, with pressing at 5° balling(total time on skins 4 days). Uninoculated malolactic fermentation. No additions of acidity. Unoaked. The intention was seeking the fine tension and clarity of young vine-fruit.
