in the cellar : The 1999 Nouveau has been made from specially selected, gamay noir and merlot grapes. The slightly warmer 1998 summer resulted in a quicker ripening period, which has assured a soft, well balanced tannin content.

Only the healthiest grapes were selected, destalked and crushed and fermented in closed cement tanks. No acid has been added, and the wine is pumped over three times a day for the duration of the first 75% of alcohol fermentation. It is fermented until 5 degrees balling on the skins, racked and 20% of the prejuice has been added.
