ageing : The wine is super now. Enjoy over the next year or two.

in the vineyard : We have long recognised the potential our country has to produce an excellent Rosé. As Fairview goats have an uncanny knack of finding the tastiest fruit, we set the friskiest of our flock to roam the vineyards in order to select grapes for this vibrant dry Rosé. Discerning as ever, our goats selected the best varieties to produce full flavoured Rosé, packed with summer fruit.

The grapes are mostly sourced from dry farmed old bush vines. These are mostly vineyards with small cropping levels resulting in wine with considerable concentration.

about the harvest: The grapes were harvested from vineyards in the Paarl, Piekenerskloof, Pedeberg and Malmesbury regions in February and March 2004.

in the cellar : The different varietals were harvested ripe and crushed. Juice being drawn off the red grapes and cold fermented at 14ºC.
