in the cellar : Blended from Chenin Blanc and Muscat, Sonnet displays all the characteristics of healthy grapes picked at optimum ripeness. After crushing and destalking, 8 hours of refrigerated skin contact was allowed to maximise the extraction of flavours. Gentle pressing in a velo press was followed by clean settling and a controlled fermentation.
