in the cellar : Crushing and destemming was followed by mash cooling and 5 hours skin contact. Overnight settling with pectolitic enzymes. Cold fermentation with the aid of selected yeast strains. Fermentation was arrested at the right alcohol-sugar ratio by cooling of the must. After fermentation the wine spent 1 month on its primary lees.
