in the cellar : Late Sun Red is a blend of approximately 85% Cinsaut and 15% Cabernet Sauvignon. Cinsaut is extensively planted in dry land vineyards in the northern areas of the Paarl wine region, where it produces yields of less than 10 mt/ha. Both the Cinsaut and the Cabernet Sauvignon wines are allowed to ferment dry on the husks, and racked without SO2. Malolactic fermentation is allowed to proceed naturally, after which the wine is racked again with a small addition of SO2.
