about the harvest: Boland Kelder's Cape Riesling is harvested in mid March and comes from the climatic regions of Paardeberg and Klipheuwel. During harvest the grapes are pre-cooled and removed from the skins.

in the cellar : The juice is then settled and the free-run portion is cold fermented. After fermenting dry, the wine is left on the lees for 6 weeks, then blended and matured under cool conditions.
