Vriesenhof Kallista 2001

Meaning of name - Derived from Plato's statement thay in life one should look for ”the good & the beautiful /noble” is the Greek name chosen for the flagship blend.
The Kallista has always been a cheerful, accesible wine, mainly due to its proportion of Merlot and spending 18-24 months maturing in French oak. With this release, the wine has really turned serious, with more Cabernet Franc and Cabernet Sauvignon and it is still very edgy. The flavours are black stone fruit, cinnamon and for the first time, a flinty component that shows on the palate.

about the harvest: The grapes were harvested in February 2001.

in the cellar : Traditional fermantation between 28 to 30ºC. We kept the wine in tanks for 8 days. Before we press the sugar must be 5º Balling and it will be ready to be press. We used French Oak barrels for 18 months.
