Sugar: 18 – 20º Balling, pH: 3.2, Total Acidity: 9.5 g/lt
about the harvest: Harvest date: 18 January till 9 February 2005
in the cellar : Destalking and crushing followed by mash cooling. Overnight settling with enzymes. Cold fermentation with selected yeast strains. At the right alcohol:sugar ratio fermentation was arrested by centrifuge.
