This Babylons Toren selection Chardonnay came from low yielding vineyards producing grapes with exceptional flavours of apricot and pear. Barrel fermentation in small French oak barriques has provided the structure and nuances of almond and vanilla. Malolactic fermentation and ten months ageing on the yeast lees, has added a creamy texture and a long finish. Oaked: 10 mnths.
A wine of these proportions demands rich, cream based pasta or seafood dishes, or with a liver based paté.
