in the vineyard : The fruit of this wine, ranging in age from 9 - 13 years, were sourced from vineyards in the Stellenbosch and Paarl areas, situated on mostly south to south-westerly facing slopes.

about the harvest: The grapes were harvested by hand at 23Â° and 24Â° Balling during February and March.

in the cellar : Following settling, the clean juice was racked to fermentation and inoculated, and the Chardonnay was fermented with oak staves.
