in the vineyard : The 2003 Cabernet Sauvignon grapes were hand harvested from three site specific blocks on the Estate. The vineyards were planted in 1993 and 1998. The vineyards are all planted on a north – westerly facing slope. Rigorous viticultural practices ensures low-yield vineyards.

in the cellar : The grapes were hand harvested at optimum ripeness crushed and destalked and pumped into a combination of stainless steel and open concrete fermenters. Controlled fermentation with regular punch downs and pump overs were done to ensure gentle extraction. Once the fermentation has terminated the wine is placed in 225 litre French oak.
