Uitkyk Reserve Shiraz 2003

The first Uitkyk Shiraz since 1985! The last crop of a 28 year old vineyard…. The vines made sure their last effort was one to be remembered.
Colour: Dark ruby with pink hues and a bright rim.
Bouquet: A combination of dried fruit, berries and spices backed by lively vanilla and oak aromas.
Taste: The nose carries through onto the palate with fruit and oak contributing to a well-rounded, velvety feel with the backbone of ripe tannins. A long peppery finish.

Not to be taken lightly, this mouthful of flavours will partner well with robustly-flavoured dishes. Lamb shank, stuffed lamb shoulder and pork with crackling are ideal to bring out the best in this lively, yet serious wine.

ageing : The wine is already accessible, but will develop even further over the next 3 – 5 years.
in the vineyard : A 100 % Shiraz, this wine was made from the grapes of a single vineyard on Uitkyk called “ the vlei ” , planted way back in 1975 when the most common rootstock was Jaquez. It was the last crop from this vineyard before it was uprooted.

Planted in shallow, sandy soil, this vineyard didn’t receive any supplementary irrigation, thus limiting the yield to a low 2,4 ton per hectare.
about the harvest: The grapes were hand picked at 25°B in early March 2003.
in the cellar : Fermentation took place in an open fermenter at 23-24°C until dry. A pure yeast culture (D254) was used and the fermentation finished in 8 days. After pressing, the wine was transferred to barrels allowing malolactic fermentation to finish; thereafter it was racked twice during the maturation period of 15 months. Mainly French wood was used (60%), but also American (32%) and Hungarian (8%) barrels in a combination of new (60%), second fill (20%) and third fill barrels (20%). Bottling took place in September 2004.
