Berries hand-sorted.
Cold maceration for 5 days before innoculation.
Regular pump overs and punch downs.
After fermentation another 5 day maceration on skins before press.
Complete malolactic fermentation in barrel.

Maturation
Barrel-matured in French oak for 12 months.
Bottle-matured for 12 months
