in the cellar : Signature is a label series created for winemakers to express their individual styles. In recognition of the winemakers; particular approval of the wine, each bottle carries their signature as a mark of authenticity. The 1997 Cinsaut was made by New Zealand winemaker Alastair Maling for Cape Wine Cellars from 100% Cinsaut grapes, which is extensively planted in dry land vineyards in the northern areas of the Paarl wine region of South Africa where it produces yields of less than 10 mt / ha.

Signature Cinsaut has been sourced from bush vines, hand harvested, temperature control fermented and briefly aged with American oak. Malo-lactic fermentation was allowed to proceed naturally, after which the wine was racked with a small addition of SO2.
