in the vineyard : The grapes came from vineyards in the Stellenbosch and Durbanville areas, planted from 1983 to 1996 at altitudes ranging from 180 to 245 metres above sea level. The vineyards face south to south west.

about the harvest: The grapes were picked by hand at 21 to 23° Balling.

in the cellar : In the cellar the juice received no skin contact and fermented at 14 °C for 21 days. The sparkle was added after fermentation. In 1983 it was the first Cape sparkling wine to be awarded Superior classification. It was also the first Cape sparkling wine to be made from the noble Sauvignon blanc grape.
