Steenberg Cabernet Sauvignon/Cabernet Franc/Merlot 2004

A classic Bordeaux Style blend of medium body with a complex black berry and cedar wood bouquet and ripe tannins backed by a firm structure on the palate.

about the harvest: The grapes were harvested at a sugar level of 24-25°B in March 2004.

in the cellar : The grapes were then de-stalked, crushed and pumped into stainless steel fermentation tanks. Inoculated with a cultured yeast followed by fermentation temperature controlled at 28-30°C. After the grapes had fermented dry, they were pressed and the wine then underwent malo-lactic fermentation. The wine was then matured in French oak barriques for 14 months. (2nd/3rd fill barrels) before being blended proportionally.
