in the vineyard : Established in 1693, Fairview cellar with its spectacular view of Table Mountain, lies on the south western slopes of Paarl, at the Cape of Good Hope. Fairview was purchased by my grandfather in 1937 and I am the third generation of my family to make wine at the Fairview cellar. We have a vineyard in the leading Coastal wine production area where geographic and climatic diversity allows us to craft a range of truly distinctive wines. This Cabernet Sauvignon is produced solely from fruit from our Stellenbosch vineyards and is the first vintage under this label.

Winemakers Notes:
Stellenbosch is the primary viticultural area in Southern Africa for growing Bordeaux varietals. This is our first 100% Stellenbosch origin Cabernet from an exciting new project.

about the harvest: Harvested: Houmoed Vineyard 16 March 2004 / Southern Cross Vineyard 17 March 2004

Harvested from the above-mentioned Stellenbosch vineyards on the 16th and 17th March. The grapes were hand picked at 25.9º and 24.9º Balling respectively; destalked and crushed.
