about the harvest: The grapes are from selected vineyards for this specific style of wine in the Tulbagh Valley. Harvested throughout the season depending on the cultivar - begining February till early April.

in the cellar : Grapes are crushed and destemmed, and pressed with minimum skin contact. Alcohol fermentation takes place at 15Â°C where after the wine is blended and sweetend with juice and concentrate.
