in the vineyard : The Chenin Blanc and Sauvignon Blanc grapes are grown on sandy loam soil on the highest slopes of the Olifants River Mountain ranges while the Muscat dFrontignan are grown in the fertile Olifants River Valley itself.

about the harvest: In the southern hemisphere summer lasts from December until the end of February. Muscat dFrontignan grapes are harvested very early in January while Chenin Blanc and Sauvignon Blanc grapes were harvested from late January to early February.

in the cellar : A blend of 30% Sauvignon Blanc, 40% Chenin Blanc and 30% Muscat dFrontignan. Cool crushed grapes underwent a three hour skin contact in static drainers before being fermented under controlled conditions at 15°C.
