Verdun Cabernet Sauvignon 1997

This distinctive ruby coloured Cabernet Sauvignon, is characterised by quality fruit, has an upfront bouquet and concentrated fresh flavours of cassis, cinnamon, vanilla and unsweetened chocolate. It has a supple succulent mouthfeel, is well balanced and integrated with a lingering aftertaste.

in the cellar : This classical variety acknowledged as a top noble cultivar worldwide is well established here at Verdun. Our Cabernet Sauvignon has been entered in the block competition and has consistently ended as one of the top three blocks in Stellenbosch. If as they say "Wines are made on the vines", we have only good prospects to look forward to. The Cabernet Sauvignons are planted on a variety of altitudes, slopes and soils on Verdun. This offers a selection of components for blending, to create wines that show not only structure, but also elegance.

The fruit enjoyed a long cool ripening period on excellently manicured vines. Harvesting commenced once fruit intensity, colour and richness of tannins were at their optimum. After secondary fermentation the wine was matured in new French oak for between 15 and 18 months.
