in the cellar : Skins and juice separated as soon as possible. Rack clear juice after cold settling. Fermented in small French oak barrels until dry. Wine left on gross lees and suphured. Fine lees strirred up frequently during ageing process. Wine aged in barrels for 4 months until blend was prepared for bottling.
