in the vineyard :

The grapes were chosen from vineyards in Stellenbosch and Malmesburry. Drostdy-Hof RosÃ© is made from 100% Cabernet Sauvignon grapes.

about the harvest:

The grapes were harvested at between 20Â° and 22Â° Balling late February.

in the cellar :

The grapes were crushed and the juice separated from the skins immediately after crushing. After cold settling the juice was inoculated with chosen yeast culture and fermented in stainless steel tanks at 15C .
