in the cellar : The 1997 vintage was cool and wet resulting in a long growing season and ripening later than usual. Thus this Cabernet Franc was harvested in April at 22,9ÂºBalling. After de-stalking, pure yeast culture was added for fermentation. Punching down and pumping over was done 3 times a day and the wine was pressed from the skins after 12 days. Malolactic fermentation was completed in stainless steel tanks after which the wine was matured in oak barriques for 15 months.

Three barriques were specially selected by winemaker Storm Kreusch, as a tribute to her daughter, Chelene. On the 29th April 1997 Storm went into lavour while racking this Cabernet Franc and four hours later Chelene was born. These barrels were nurtured and hand-bottled directly from the barrel with neither fining nor filtration.
