in the vineyard : Vines have been grafted on a special rootstock for earlier ripening - very important in the cool Durbanville area where traditionally it is more difficult to ripen red grapes. A lot of hard work went into the vineyard with a heavy green harvest and continual leaf plucking! Extensive canopy management, allowing full exposure on the morning sun side and only partial on the afternoon sun side assists even ripening but prevents the bunches getting sunburnt.

about the harvest: The grapes were only picked after extensive tastings in the vineyards looking for flavours and phenolic ripeness.
