ageing : Due to the low pH, wine should be able to develop in 3- 5 years.

in the vineyard : Climate: Severe warm weather experienced during January resulted in an earlier than usual start to the harvest... These conditions lasted well into the second week of February and lead to rapidly rising sugar levels. From February 8 temperatures declined and subsequently the sugars dropped and harvesting of white and red grapes slowed considerably. Due to the cooler conditions sugar levels increased very slowly whilst grape flavors developed noticeably. The ripening conditions were close to perfect for the tail-end of the crop.

The grapes were hand harvested at optimal ripeness when the typical tropical flavours are at an optimum.

in the cellar : No skin contact was given and grapes were immediately pressed. A selected yeast strain was used to enhance the tropical flavours associated with Viognier. Twenty-two percent of the wine was fermented in second fill French oak barrels, while the rest of the wine was cold fermented in stainless steel tanks.
