Bon Cap Cabernet Sauvignon Blanc

Deep intense ruby coloured wine. Prominent red and black berry fruits and spicy/earthy undertones and interlaced coffee and dark chocolate oak derived flavours. A full-bodied, but accessible wine that will compliment hearty red meat and venison dishes. Drink now, best kept for 3 – 5 years

in the vineyard : 12 year old vineyard or clay/lime soil with high organic matter content. Pruned to 1 bud spurs to ensure low production of 4-6 tons/ha. Irrigation control ensure small berries with high colour and flavour and tannin concentration

about the harvest: Handpicked at a phenolic ripeness of 25º B. Crushed destemmed and fermented in open fermentation “kuipe”. Aerated remontage 3 times/day. Fermented dry on skins and then malo lactic fermentation was done in 300l oak (2/3 fill 60% French and 40% American oak). Aged for 13 months were after it was given a rough filtration before bottling
