ageing : The Merlot is ready for drinking at the time of release, and will mature well for 3 to 5 years. The plum fruit will blossom as the wine ages in the bottle.

in the cellar : After destalking, the free-run juice and berries are inoculated with specially selected yeast strains to start fermentation. The juice is fermented on the skins until the wine maker decides that the correct colour intensity and tannin concentration have been reached, after which the wine is drawn off and the skins pressed to complete fermentation in stainless steel containers.
