Dark red, clear and brilliant. Smoky spices, with chocolate and cigar box flavours. Mouth filling, berry fruit. Well-rounded tannins, a good follow-through and aftertaste, with well-balanced acidity and integrated oak.

ageing : The wine will mature well for 3 to 5 years, softening and blossoming with bottle age, probably reaching its peak in 2003.

in the cellar : After destalking, the free-run juice and berries are inoculated with specially selected yeast strains to start fermentation. The juice ferments on the skins until the wine maker decides that the correct colour intensity and tannin concentration have been reached, after which the wine is drawn off and the skins pressed to complete fermentation in stainless steel containers. 30% Of the Shiraz was matured on French oak staves for 3 months.
