Kleinbosch Reserve Cabernet Sauvignon 1999

Deep crimson red. Lifted forest flavours and cigar box nuances, integrated with toasty French oak and supported by rich primary berry fruits. Integrated ripe berry fruits and dusty oak flavours, complimented by definite ripe fruit tannins. Good integration of acid levels with oak and fruit tannins, resulting in a long, flavoursome finish.

ageing : Being a full-bodied wine, this Cabernet will mature well in the bottle for 4 to 6 years. Serve with red meats & cheese.

about the harvest: The individual vineyards were monitored and hand-picked at optimum fruit and flavour maturity.

in the cellar : The grapes were destemmed and crushed, after which fermentation in stainless steel vessels was induced under temperature controlled conditions. The tanks were pumped over every 6 hours until just before dryness, at which time the wine was pressed out, with all pressings retained. The wine was racked before allowing malolactic fermentation to be completed. Following final rackings and blending, the wine was aged with French oak staves for 8 months.
