Withington Shiraz/Cabernet Sauvignon 2007

Rich ruby core with wide, bright, purple rim. Ripe, red berry fruit on the nose with hints of plum, strawberry and cherry. Light floral notes in the background. Well rounded mouth with lively attack highlighting the supple tannins. More berry fruit develops in the mouth with gentle smoky note. Elegant with fine balance and backbone. Very enjoyable now and over next few years. - Dave Hughes

This wine will go well with almost all foods. While especially good with meat and pastas, it also has the guts to stand up to light curry or Thai-style stew.

ageing : Enjoy this wine now or over the next few years.

in the vineyard : This wine is made up of 60% Shiraz and 40% Cabernet, grown in the Perdeberg region some 175 meters above sea level. The 12 year old un-irrigated vines provide good yields (helps the price!) with healthy, evenly ripened fruit.

about the harvest: Harvesting is by hand

in the cellar : A portion of the blend has small barrel maturation all with the aim of producing a subtle oaked character without ever dominating the fruit flavours and natural tannins.
