about the harvest: Our grapes are hand-picked between 20 and 21° Balling, chosen and then gently crushed, destalked and pressed straight away.

in the cellar : There is no contact with the skins hence the wine obtains an elegant, light onion-skin colour. Cold fermentation takes place for 2 weeks after which the wine is racked, stabilised and bottled.
