Colour: Bright with lively green tinges.
Bouquet: Very pronounced green pepper with dustiness and earthy aromas.
Taste: Medium-bodied with a crisp acidity and intense green pepper backed by subtle apple and tropical fruit flavours. The subtle fruitiness combines well with the greener flavours on the palate.

This robust wine stands up well to a variety of dishes from pastas to fish, poultry, pork and veal.

The grapes were sourced from one of the vineyards on the slopes of the outskirts of the valley. The vineyard practices and the trellis system ensured filtered sunlight resulting in radiated heat that allows gradual ripening of the fruit and maximum development of flavour compounds.

in the cellar : Ten hours of skin contact in specially designed stainless steel separators was followed by overnight settling of the juice. Fermentation took place at 12° - 14° C and the wine was left on the lees to be racked shortly before bottling in July 2009. The extended lees contact contributed to the structure and mouth-feel and will ensure longevity of the wine.

The Rhinofields range carries very limited release wines and the name refers to the indigenous Cape fynbos growing close to the Durbanville Hills cellar and which is being conserved. The Rhinofields Inner and Outer Valley Sauvignon Blancs are produced to demonstrate the rich diversity of terroir to be found within a very small production area in which virtually every vineyard produces fruit with a distinctly individual character
