Le Bonheur Chardonnay 1997

According to Sakkie Kotze the wine has citrus aromas with dominant lime flavours on the nose. On the palate the rich citrus flavours are well balanced with subtle French oak flavours.

about the harvest: The grapes were picked by hand at 23º Balling from February 12 to 24.

in the cellar : The juice was in contact with the skins for 4 hours. Sixty percent of the wine fermented in stainless steel tanks at 13ºC to 15ºC for 20 days. The remaining part fermented in new 300 litre French oak casks and underwent secondary malolactic fermentation. This component spend 4 months on the lees before it was blended with the rest.
