about the harvest: The grapes were picked by hand at 23Âº Balling from February 12 to 24.

in the cellar : The juice was in contact with the skins for 4 hours. Sixty percent of the wine fermented in stainless steel tanks at 13ÂºC to 15ÂºC for 20 days. The remaining part fermented in new 300 litre French oak casks and underwent secondary malolactic fermentation. This component spend 4 months on the lees before it was blended with the rest.
