2007 was a moderate year resulting in a superior Shiraz vintage with an excellent balance between colour, structure and fruit profile. The wine has an opulent nose of juicey plums and sweet blackcurrants. Interlaced with this are hints of spicy cloves, nutmeg and coriander seeds. Well weighted oak brings its own spiciness, with plenty of black pepper and good fine tannin. The wine has a full, viscous texture and an ultra-long velvety finish

Add sun dried tomatoes, sliced red peppers and a handful or two of whole cherry tomatoes. Dose liberally with olive oil or butter, shave off some orange zest and sprinkle with Malden salt (rosemary optional).
