Stellar Organics no-sulphur-added Cabernet Sauvignon 2009

French oak chips were used during ferment to stabilise colour and not as a flavourant, allowing the true cultivar taste of ripe roasted red peppers to shine through. Broad, warm tannins and rich mouthfeel characterise this wine.

in the vineyard : Cooler growing conditions, especially from vineyards nearer the sea have mitigated the effect of hot spells on the ripening of the grapes. Cabernet is a late ripener, so this has worked in its favour, resulting in good colour and strong cultivar flavour.
