in the vineyard : The grapes were sourced from vineyards in the Philadelphia and Darling areas. The vines, situated some 50m to 100m above sea level and planted between 1985 and 2000, are grown in decomposed granite, gravelly and Tukulu soils and are grafted onto nematode-resistant rootstock Richter 99, R110 and 101-114.

about the harvest: The grapes were harvested by hand and machine at 21° to 23° Balling during February and March.

in the cellar : Skin contact was allowed for a period of 12 hours after which the grapes were pressed and the juice settled overnight. The clear juice was next fermented in temperature-controlled stainless steel tanks for a period of two weeks at 16° C. The wine was stabilised before bottling.
