in the vineyard : This wine is made from 100% Chardonnay grapes which were sourced from the Perdeberg district, about 60 minutes north-east of Cape Town.

about the harvest: The grapes were hand-picked during the first half of February from vines grown 320m above sea level in yellow-brown, stony soils.

in the cellar : The wine underwent alcoholic and malo-lactic fermentation, before being matured on the lees for 4 months. It then had a gentle fining and filtration before bottling.
