Spier Vintage Selection Pinotage 2007

Deep ruby in colour, the wine shows aromas of cherry tobacco, berry and subtle spicy notes, with a rich roasted undertone. A lingering, fruit-laden integrates well with oak-derived flavours.

Serve with seared lamb chops in raspberry coulis with sweet potato mash.

Vineyard
Trellised, 9 year-old vines planted on southeast-facing slopes yielded the grapes for this wine. The vineyards received supplementary drip irrigation and produced 8 tons per hectare.

about the harvest: Grapes were harvested from chosen vineyard blocks at 25.7° Balling.

in the cellar : Cold soaked for 2 days at 10°C. Following fermentation in stainless steel tanks, wines from specific tanks were chosen to undergo malolactic fermentation in oak barrels. The wine matured in a combination of French (70%) and American (30%) oak for 14 months, before individual barrels were chosen for blending.
