ageing : Three to four years from vintage.

in the cellar : Hand picked in the cool of the morning so as to capture flavours. Destemmed and cooled but no crushing. No skin contact, but immediate pressing. No sulphur added pre-settling, so as to bring out flavours. Inoculated in tank with yeats and transferred to barrels for 12 months.
